The hot red peppers used by McIlhenny Company Tabasco® originated in Central America and were first planted on Avery Island over 130 years ago by Edmund McIlhenny. The hot peppers are hand picked as soon as they ripen to the perfect shade of bright red, then mashed and mixed with a small amount of Avery Island salt. They are then placed in white oak wooden barrels and allowed to ferment and then age for up to three years. Tabasco® is shipped to over 160 countries around the world. Tours are available and the PepperFest is held annually.
